Easiest Instant Pot Beef StewIf you know me, you know I rave on and on about the instant pot! But I seriously love this kitchen gadget and use it at least 3 times a week, sometimes even more.

If you haven’t heard about the Instant Pot craze, it is a slow cooker, electric pressure cooker, rice cooker, yogurt maker and it has many more features depending on which model you buy. For me, I love that it is fast and hands off so you can fold the laundry, take a nap, or bring your kids to hockey practice while your dinner is cooking away. It’s been so cold in Toronto the last few weeks, I was dying for a warm comforting meal! So, I decided to make Bigwig Jerky in my Instant Pot.  Here is my recipe for quick, easy and cheap Instant Pot Beef Stew.  Enjoy!



Ingredients: 

For the Marinade: 

  • 1lb stewing beef (diced)
  • 1/2 cup light soy sauce
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • Dash of fresh ground pepper

For the rest of the stew: 

  • Butter to coat the Instant pot (about 1 tablespoon)
  • 1 medium size onion (diced)
  • 2 cloves garlic (peeled and chopped finely)
  • 2 medium sized carrots (peeled and cut into thick rounds)
  • 1 large white potato (diced in large chunks)
  • 2 cups beef broth
  • 1/2 cup all purpose flour
  • Dash of fresh ground pepper
  • 1 tablespoon dried oregano

Directions: 

  • Marinate diced stewing beef with soy sauce, apple cider vinegar, Worcestershire sauce, and pepper at least 4 hours or overnight in the fridge.
  • Heat up Instant Pot on the saute function and allow the pot to heat up
  • Once the pot is hot, put butter, onion, and garlic to saute until golden brown
  • Put marinated beef cubes and let it brown on both sides
  • Add carrots, potato, beef broth, flour, pepper and oregano and stir to combine
  • Put the lid on the Instant Pot, turn off saute mode on the Instant Pot and set to Manual at high pressure for 35 minutes (make sure the valve on top is on “sealing”)
  • Once the Instant Pot finished cooking, it will beep. You can leave it so the pressure release automatically or carefully manually release the pressure
  • Once the pressure is released, enjoy your beef stew with some rice or crusty bread underneath a blanket watching a movie!
