I am so happy to get my hands on The Wickaninnish Cookbook! The recipes are so drool worthy but the book in general is just so beautiful.
The Wickaninnish inn is located in the beautiful Tofino in British Columbia. If you haven’t been to BC, put it on your bucket list. It is truly one of the most gorgeous places on earth. I have been to Vancouver but haven’t had the chance to visit Tofino yet. After reading this cookbook, it is on the bucket list!
What I love about this cookbook is that it includes recipes from all courses but also throughout the many years that the inn have been in operation. So there are a lot of recipes from previous chefs that once worked at the inn. All the recipes are written in easy to understand wording along with beautiful pictures to help the recipes come together.
The recipes are all sophisticated but still approachable so you know you can replicate it. Also, if you visited the inn before and loved their food, there’s a good chance the recipe is in the book and you can learn how to recreate it. How cool is that?
While reading through the book, one thing that really stood out to me was a motto I live by daily. On page 21, in the section on a note about the recipes, they wrote that “Remember, recipes are guidelines, not rules. Please alter, add, or take away as you see fit to create your own perfect dish.” This is exactly how I write my own recipes and also teach during my cooking demos. Cooking is all about what you like to eat and using your intuition to make it your own. I love how they wrote that in the notes. Often times, people get a cookbook and follow it word by word! Live a little and be creative!
Another thing to point out is that a lot of the recipes uses fresh ingredients like seafood from the ocean. They are all very comforting dishes and really makes your mouth water when you read or look at the picture. And I can just imagine closing my eyes, eating crab cakes while overlooking the beautiful Pacific Ocean! #goals, amirite?
If you are a food photographer or stylist, this book is filled with beautiful images that will truly inspire you! I found myself looking at the composition of the pictures quite a bit in this book since every page was so beautiful.
If you have a chance, I would highly recommend this cookbook! Also, who’s in for a trip to Tofino?
