Pad Thai Sauce
  • 3TBSP fish sauce
  • 2cups water
  • 1TBSP garlic powder
  • 3TBSP Tamarind Paste
  • 1/4cup palm sugar
  • pinch salt
Pad Thai Noodles
  • 1/2pack rice noodles
  • oil for cooking
  • 1medium onion diced
  • 3cloves garlic, finely diced
  • 1tsp Ginger (roughly chopped)
  • 2 carrots (peeled and thinly sliced)
  • 1lb Chicken breast (cubed)
  • 2 eggs (scrambled and thinly sliced)
  • 2sprigs Green onion (finely sliced)
  • 1cup bean sprouts
  • 1/4 cup peanuts (roughly chopped)
  • 1 lime (wedged for garnish)
  • cilantro (for garnish)
Pad Thai Sauce
  1. Combine all ingredients in the pad Thai sauce and bring to a boil. Whisk until sugar is dissolved and turn off heat.
Pad Thai Noodles
  1. In a large bowl, pour enough boiling water to cover half a pack of rice noodles. Let sit for 20 minutes (or until the noodles are soft). If you don’t want to use the soaking method, you can boil the noodles for about 4 minutes and drain.
  2. In a large skillet, heat oil to medium heat and cook onion, garlic, and ginger until the onions are soft
  3. Add cubed chicken breast to onion mixture and cook until chicken is fully cooked
  4. Remove onion, garlic, ginger and chicken once done cooking and set aside on a plate
  5. Scrambled the eggs and cook an omelette, remove from pan once cooked and cut into strips.
  6. Add soften noodles, onion, garlic, ginger, chicken to a large skillet (medium heat)
  7. Stir fry the noodles and gradually add the pad thai sauce. Add a little at a time to give the noodles a chance to soak up the sauce.
  8. Add green onions, bean sprouts and mix until combined. Before serving sprinkle chopped peanuts for garnish and texture. You can also add lime and cilantro for garnish!
